Yes, it's true, I worship seitan.

Yes, it’s true, I worship seiten. Now wait a minute before you start jumping to any conclusions.

Seitan (say-tahn) is a food made from wheat gluten. It is often used as an animal protein replacer in vegan and vegetarian cooking because of the “meaty” texture and high protein content. It is very easy to make, low in fat and super nutritious. Did I mention tasty?

These days seitan can be found at many grocery stores but it is expensive. You can make triple the amount at home for about the same cost of purchasing it. Even inexperienced chef’s and chefette’s will find making seitan simple, fun and economical.

You may be thinking “but what do I do with it?”

Seitan can be used in stir fry’s, stews or sliced for sandwiches. There are numerous ways to incorporate seitan into your favorite recipes. A good vegan/vegetarian cookbook or some poking around on the web will help get you started.

My favorite seitan recipe is from the cookbook Vegan with a Vengeance. Good luck!

Speaking of tofu, although

Speaking of tofu, although it's probably the most unhealthy way to eat tofu, fried tofu is absolutely delicious!

Speaking of wheaty fake-meats

I fell in love with the imitation chicken that Dharma Garden in Chicago has. Have you ever had it? I want to know what it is and either how to make it or where to buy it. I love that stuff in stir fries and especially with garlic sauces.

Also - I know that many others know this, but if you want a cheap source of really good Tofu, find your city's asian food market and shop there. Tofu that is normally $4-5 at whole foods sells for $1 there and it's just as good if not better.
